Mussel Fritters

Ingredients

For these fritters we used Moore Wilson's Mussel Fritter mix, which contains Green lip mussels, onion, salt, pepper and parsley. 

Method

To make the batter whisk two eggs and 1/4 cup of milk in a bowl, add one cup of flour and 1/4 teaspoon of baking powder, beat until combined. Add mussel mix. 

Add dessert spoonfuls to a hot pan and cook for approx three minutes on each side or until golden. 

Spritz over some Damson Plum Vinaigrette and garnish with chopped parsley. 

 Makes approx 16 fritters.
