Prosciutto & Salad Wrap with Damson Plum Vinaigrette

Ingredients

6 slices of prosciutto
12 rocket leaves
6 chives
6 slices of red pepper
6 butter crunch lettuce leaves
12 bean shoots
Damson Plum  Vinaigrette

Method

Wash and prepare salad leaves and slice red pepper thinly.  Unwrap the prosciutto and lay out evenly on a chopping board.  On each piece of prosciutto lay a butter crunch lettuce leaf, 2 rocket leaves, a slice of red pepper, a chive and 2 bean shoots.  Spary liberally with Damson Vinaigrette

Roll each piece of proscuitto into a cyclinder shape, then cut each in half.  Makes 12 pieces.
