Pork Stir Fry

Ingredients

1 cup of Rice (cooked and cooled)
2 cups of cabbage, finely sliced
1 cup of carrots, finely sliced
1 onion, finely sliced
½ green capsicum, finely sliced
1 cup of bean sprouts
2 eggs
300grms pork fillet
Coriander

Marinade

1tbsp Damson Plum Sauce
2tbsp Soya Sauce
1tbsp Sesame Oil
¼ tsp Fish Sauce
1tsp Brown Sugar
1 clove of garlic

Method

Place all the marinade ingredients in a bowl.  Finely slice the pork fillets and add to the marinade.  Refrigerate for 30 minutes.

Heat a pan and stir fry the Pork.  Place in the oven to keep warm.  Stir fry, the onion, cabbage, carrots and capsicum, place in the oven to keep warm.  Stir fry the bean sprouts and place in the oven to keep warm.  Stir fry the rice and again place in the oven to keep warm.  Place the eggs in a bowl, beat together, and then put them in the hot pan.  Once cooked, slice thinly.

To make up the dish, place the cooked rice on the plate, then top with the vegetables, then the bean sprouts, then the pork.  Lastly place the cooked egg on the top and sprinkle with coriander.  Serve immediately.
