500g dark good quality chocolate
130g bar Damson Plum Terrine
150g marshmallows (mini marshmallows or cut large ones into small pieces)
Line a shallow baking dish with baking paper. Cut Damson Plum Terrine into large slices and put aside.
Melt chocolate over a double boiler, stirring constantly and taking off the heat just before chocolate is completely melted to prevent burning the chocolate. Mix marshmallows with melted chocolate and spread half of this mixture into the bottom of the tray.
Evenly place the Damson Plum Terrine over the rocky road mix in the tray, ensuring that when cut each piece will have some terrine. Finish by spreading the remaining rocky road mixture over the top. Refrigerate until the chocolate is set, approximately 2 hours. Remove baking paper, slice into pieces and serve.
