For the muffins
100g dark chocolates
100g Damson Plum Jam
150g caster sugar
1 pinch of salt
2 large eggs (beaten)
150g self raising flour
For the icing
2 cups icing sugar
3 tsp Damson Plum Powder dissolved into 3 tsp boiling water
Preheat the oven to 180°C. Put the butter in a heavy bottomed pan on the heat to melt. When melted, take off the heat and stir in the chocolate. Once chocolate has melted and the mixture is smooth, add the Damson Plum Jam, sugar, salt, and eggs. Mix well and then add the flour.
Pour the mixture into muffin tins and bake for 25 minutes. Cool on a rack for 10 minutes before turning out.
While the muffins are baking make the Damson butter icing. In an electric mixture beat the butter until pale and smooth. Continue mixing, and gradually add the icing sugar and Damson Plum Powder mixture, half a cup at a time. Beat between each addition until a creamy texture.
Once muffins are cool, pipe or spread the icing over muffins.
