Easy pikelets with Damson Plum Jam

1 egg


1/4 cup sugar

3/4 cup milk (about)

1 cup flour

1 tsp baking powder

1/4 tsp salt

25g butter (optional

)
Damson Plum Jam 

Beat the egg and sugar until thick and add with the milk to the sifted flour, salt and baking powder. Lastly add melted butter. Mix until a smooth batter is formed. Use a tablespoon to spoon pikelet sizes portions onto a hot greased girdle. Flip after 1 minute or when the underside is slightly brown. Serve with Damson Jam and whipped cream.
