An easy and delicious vegan damson plum and chickpea nibble. Perfect for nibbling on while you watch TV, sprinkling over your salad, or sharing with friends on a platter/grazing table.
If you want to spice things up a little you could add some chilli flakes to the mix to give it a little more KAPOW.
Ingredients
Can of chickpeas – drained
(don’t ever throw the aquafaba or liquid from the chickpeas away – it can replace egg whites in a recipe)
3 tablespoons - Spicy Damson Plum Ketchup
1 tablespoon - Olive / Rice Bran Oil
1 teaspoon - salt
Method
Pre-heat oven to 220C
Pop all the ingredients in a bowl and coat the chickpeas in the ketchup and oil
Cover a baking tray with baking paper and spread the chickpeas out on this.
Put in oven, bake at 220C for 10 min then turn the oven down to 180C and bake for another 20 min
Serve on a platter, in lieu of “beer nuts’ or as a topping for salads.
