Damson, Chocolate Coconut Balls

Ingredients

250grams (8.8oz) Sweet Digestive Biscuit
395g (14oz) Condensed Milk 
1 Cup of Coconut 
1/4 Cup of Cocoa Powder
1/4 Cup of Damson 
Extra Coconut for rolling (1 cup) 

 

Method

1. Blitz the digestive biscuits in a food processor until you have a fine consistency.

2. Add one cup of coconut to a small bowl and set aside.

3. In a medium bowl, combine all your ingredients (excluding extra coconut) until well mixed.

4. Roll your mixture into one inch balls.

5. Roll your balls generously in coconut and place gently on a tray or plate.

6. Place in your fridge for at least one to two hours or until your Damson Balls firm up.

Store your Damson Balls in an airtight container.
